Ingredients 

Main Ingredients

  • 2 cups frozen peas, thawed
  • ¼ cup fresh basil leaves
  • ¼ cup pine nuts
  • 2 cloves garlic
  • ¼ cup olive oil
  • ¼ cup nutritional yeast
  • Salt and pepper to taste
  • 1 lb mushrooms, sliced
  • 1 tablespoon olive oil (for cooking mushrooms)

Instructions 

  1. In a food processor, blend peas, basil, pine nuts, garlic, olive oil, nutritional yeast, salt, and pepper until smooth.
  2. Heat 1 tablespoon olive oil in a pan over medium heat. Add mushrooms and cook until tender, about 5-7 minutes.
  3. Mix the pea pesto with the cooked mushrooms and serve.
