Ingredients 

Crust

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1 cup vegan butter, cold and cubed

Filling

  • 4 cups fresh peaches, peeled and sliced
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in vegan butter until crumbly. Press half into the baking dish.
  3. In another bowl, combine peaches, brown sugar, cornstarch, and vanilla. Spread over the crust.
  4. Sprinkle remaining crust mixture on top.
  5. Bake for 30 minutes or until golden brown. Cool before cutting into bars.
