Preheat oven to 350°F (175°C).
In a bowl, mix peaches with ½ cup granulated sugar and cinnamon. Set aside.
In another bowl, combine flour, remaining granulated sugar, brown sugar, baking powder, and salt.
Stir in almond milk and vanilla extract until just combined.
Pour melted vegan butter into a baking dish.
Pour batter over the butter, but do not stir.
Spoon peach mixture evenly over the batter.
Bake for 45 minutes or until golden brown.
