  • 4 units ripe peaches, halved and pitted
  • 1 cup raspberries
  • 0.25 cup sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pint vegan vanilla ice cream

Instructions 

  1. Blanch peaches in boiling water for 1 minute, then transfer to ice water. Peel and slice.
  2. In a saucepan, combine raspberries, sugar, and lemon juice. Cook until raspberries break down.
  3. Strain raspberry sauce to remove seeds.
  4. Add vanilla extract to the sauce.
  5. Serve peaches with a scoop of vegan vanilla ice cream and drizzle with raspberry sauce.
