Peach Melba

Main Ingredients
- 4 units ripe peaches, halved and pitted
- 1 cup raspberries
- 0.25 cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 pint vegan vanilla ice cream
Blanch peaches in boiling water for 1 minute, then transfer to ice water. Peel and slice.
In a saucepan, combine raspberries, sugar, and lemon juice. Cook until raspberries break down.
Strain raspberry sauce to remove seeds.
Add vanilla extract to the sauce.
Serve peaches with a scoop of vegan vanilla ice cream and drizzle with raspberry sauce.
