- 2 ripe peaches, diced
- 1 red bell pepper, diced
- ½ red onion, finely chopped
- 1 jalapeño, seeded and minced
- ¼ cup fresh cilantro, chopped
- 1 lime, juiced
- ½ teaspoon salt
In a large mixing bowl, combine the diced peaches, red bell pepper, red onion, jalapeño, and cilantro.
Add the lime juice and salt. Toss everything together until well mixed.
Let the salsa sit for about 10 minutes to allow the flavors to meld together. Serve immediately or store in the fridge for up to 2 days.
