Main Ingredients
- 8 oz rice noodles
- ¼ cup peanut butter
- 2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 clove garlic, minced
- ½ teaspoon ginger, grated
- ¼ cup water
- ¼ cup chopped peanuts
- ¼ cup cilantro, chopped
- ½ teaspoon red pepper flakes (optional)
Cook rice noodles according to package instructions. Drain and set aside.
In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, garlic, ginger, and water until smooth.
Toss the cooked noodles with the peanut sauce until well coated.
Garnish with chopped peanuts, green onions, cilantro, and red pepper flakes if using.
