Instructions
Cook soba noodles according to package instructions. Drain and rinse under cold water.
In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, garlic, ginger, and water until smooth.
Toss noodles with peanut sauce until well coated.
Add shredded carrots, bell peppers, and green onions. Mix well.
Sprinkle with sesame seeds before serving.
