Ingredients

  • 1 cup pearl couscous
  • 1 ¼ cups water
  • ½ cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Cook the pearl couscous in water according to package instructions. Let it cool.
  2. In a mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, and parsley.
  3. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  4. Toss everything together and serve.
