Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup coconut oil melted
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract

Filling

  • 2 cups pecans chopped
  • 1 cup maple syrup
  • 0.5 cup coconut milk full-fat
  • 2 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. In a mixing bowl, combine flour, melted coconut oil, maple syrup, and vanilla extract to make the crust. Press the mixture into the baking pan.
  3. Bake the crust for 10 minutes, then set aside.
  4. In another bowl, mix chopped pecans, maple syrup, coconut milk, cornstarch, vanilla extract, and salt for the filling.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake for 30 minutes or until the filling is set.
  7. Let it cool completely before cutting into bars.
