Ingredients 

Main Ingredients

  • 200 g Pasta any type
  • 1 cup Cherry Tomatoes halved
  • 1 Cucumber diced
  • ¼ cup Red Onion finely chopped

Pesto

  • 2 cups Fresh Basil Leaves
  • ½ cup Olive Oil
  • ¼ cup Pine Nuts toasted
  • 2 cloves Garlic
  • 2 tablespoon Nutritional Yeast
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and let it cool.
  2. 2. In a blender, combine basil leaves, olive oil, pine nuts, garlic, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth to make the pesto.
  3. 3. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, and red onion.
  4. 4. Add the pesto to the pasta mixture and toss until everything is well coated.
  5. 5. Serve immediately or refrigerate for later. Enjoy!
