Broth
- 8 cups Vegetable broth
- 1 Large onion, halved
- 3 Cloves garlic, smashed
- 1 inch Ginger, sliced
- 2 Star anise
- 1 stick Cinnamon
- 1 tablespoon Soy sauce
Noodles and Toppings
- 200 g Rice noodles
- 1 cup Bean sprouts
- 1 Lime, cut into wedges
- 1 cup Fresh herbs (cilantro, basil, mint)
- 1 Red chili, sliced
1. In a large pot, bring the vegetable broth to a boil.
2. Add the onion, garlic, ginger, star anise, and cinnamon stick. Simmer for 30 minutes.
3. Strain the broth and return it to the pot. Add soy sauce.
4. Cook the rice noodles according to package instructions.
5. Divide the noodles into bowls and pour the hot broth over them.
6. Top with bean sprouts, lime wedges, fresh herbs, and sliced chili.
