Ingredients

  • 4 medium beets peeled and sliced
  • 1 cup vinegar
  • ½ cup water
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 teaspoon peppercorns

Instructions 

  1. 1. In a saucepan, combine vinegar, water, sugar, salt, and peppercorns. Bring to a boil.
  2. 2. Add sliced beets to the boiling mixture. Reduce heat and simmer for 30 minutes.
  3. 3. Remove from heat and let cool slightly.
  4. 4. Transfer beets and liquid to a jar. Seal and refrigerate for at least 24 hours before serving.
