Ingredients

  • 2 cups Pinto beans, cooked
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 8 small Tortillas
  • 1 cup Lettuce, shredded
  • 1 cup Tomatoes, diced
  • 1 cup Avocado, sliced

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the diced onion and cook until translucent, about 5 minutes.
  3. 3. Add the minced garlic, ground cumin, and chili powder. Cook for another minute.
  4. 4. Stir in the cooked pinto beans and cook until heated through, about 5 minutes.
  5. 5. Warm the tortillas in a separate skillet or microwave.
  6. 6. Assemble the tacos by placing the bean mixture on the tortillas and topping with shredded lettuce, diced tomatoes, and sliced avocado.
