  • 1 cup Raw pistachios soaked overnight
  • 1 cup Coconut milk
  • ½ cup Maple syrup
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt

Instructions 

  1. 1. Drain and rinse the soaked pistachios.
  2. 2. In a blender, combine pistachios, coconut milk, maple syrup, vanilla extract, and salt. Blend until smooth.
  3. 3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  4. 4. Transfer the gelato to a container and freeze for at least 2 hours before serving.
