  • 1 large zucchini chopped
  • 1 large eggplant chopped
  • 4 large tomatoes chopped

Instructions

  2. Add the chopped onion and garlic, cook until soft.
  3. Add the bell peppers, zucchini, and eggplant. Cook until they start to soften.
  4. Add the tomatoes, salt, and pepper. Simmer for about 30 minutes, stirring occasionally.
  5. Garnish with fresh parsley before serving.
