Ingredients 

Main Ingredients

  • 1 cup Polenta
  • 4 cups Water
  • 1 teaspoon Salt
  • 2 tablespoon Olive Oil
  • 1 cup Cherry Tomatoes, halved
  • 1 tablespoon Fresh Basil, chopped

Instructions 

  1. Bring water to a boil in a saucepan. Add salt and polenta, stirring constantly.
  2. Reduce heat and simmer, stirring frequently, until thickened, about 30 minutes.
  3. Pour polenta into a baking sheet and spread evenly. Let cool and firm up.
  4. Once firm, cut polenta into bite-sized pieces.
  5. Top each piece with a cherry tomato half and a sprinkle of fresh basil.
  6. Drizzle with olive oil and serve.
