Polenta Bites Recipe
Delicious vegan polenta bites, perfect for appetizers or snacks.

Main Ingredients
- 1 cup Polenta
- 4 cups Water
- 1 teaspoon Salt
- 2 tablespoon Olive Oil
- 1 cup Cherry Tomatoes, halved
- 1 tablespoon Fresh Basil, chopped
Bring water to a boil in a saucepan. Add salt and polenta, stirring constantly.
Reduce heat and simmer, stirring frequently, until thickened, about 30 minutes.
Pour polenta into a baking sheet and spread evenly. Let cool and firm up.
Once firm, cut polenta into bite-sized pieces.
Top each piece with a cherry tomato half and a sprinkle of fresh basil.
Drizzle with olive oil and serve.
