Ingredients 

Polenta Cakes

  • 1 cup Polenta
  • 3 cups Water
  • 1 teaspoon Salt
  • 2 tablespoon Olive Oil

Instructions 

  1. Bring water and salt to a boil in a saucepan.
  2. Slowly whisk in the polenta and reduce heat to low.
  3. Cook, stirring frequently, until thickened, about 15 minutes.
  4. Pour the polenta into a greased baking sheet and let cool completely.
  5. Once cooled, cut the polenta into cakes.
  6. Heat olive oil in a pan and fry the polenta cakes until golden and crispy on both sides.
