Instructions
Bring water and salt to a boil in a saucepan.
Slowly whisk in the polenta and reduce heat to low.
Cook, stirring frequently, until thickened, about 15 minutes.
Pour the polenta into a greased baking sheet and let cool completely.
Once cooled, cut the polenta into cakes.
Heat olive oil in a pan and fry the polenta cakes until golden and crispy on both sides.
