Ingredients 

Main Ingredients

  • 1 tube pre-cooked polenta sliced into ½ inch rounds
  • 2 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper

Toppings

  • 1 cup cherry tomatoes halved
  • 1 cup basil leaves chopped
  • 1 tablespoon balsamic glaze

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the polenta slices on the baking sheet and brush both sides with olive oil. Sprinkle with salt and pepper.
  3. Bake for 20 minutes, flipping halfway through, until golden and crispy.
  4. Top each polenta round with cherry tomatoes, basil, and a drizzle of balsamic glaze. Serve warm.
