Ingredients 

Main Ingredients

  • 2 cups polenta
  • 4 cups water
  • 1 cup marinara sauce
  • 1 cup vegan ricotta
  • 1 cup spinach, chopped
  • 0.5 cup nutritional yeast
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook polenta with water and salt according to package instructions.
  3. Spread half of the cooked polenta in a baking dish.
  4. Layer with marinara sauce, vegan ricotta, spinach, and nutritional yeast.
  5. Add the remaining polenta on top.
  6. Drizzle with olive oil and bake for 20-25 minutes.
  7. Let it cool for 10 minutes before serving.
