Ingredients 

Dough

  • 2 cups All-purpose flour
  • ½ teaspoon Salt
  • ¾ cup Water Warm
  • 2 tablespoon Vegetable oil

Filling

  • 4 medium Potatoes Peeled and diced
  • 1 large Onion Chopped
  • 2 tablespoon Vegetable oil
  • to taste Salt and pepper

Instructions 

  1. 1. In a large bowl, mix flour and salt. Add warm water and oil, mix until dough forms. Knead until smooth. Cover and let rest for 30 minutes.
  2. 2. Boil potatoes until tender. Drain and mash.
  3. 3. In a skillet, heat oil and cook onions until golden. Add to mashed potatoes. Season with salt and pepper.
  4. 4. Roll out dough on a floured surface. Cut into circles. Place a spoonful of filling in the center of each circle. Fold and seal edges.
  5. 5. Bring a large pot of salted water to a boil. Cook perogies in batches until they float. Remove and drain.
  6. 6. Optional: Fry boiled perogies in a skillet with a bit of oil until golden.
