Ingredients 

Custard

  • 1 cup Coconut Milk
  • ¼ cup Sugar
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract

Pastry

  • 1 sheet Vegan Puff Pastry thawed

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Roll out the puff pastry and cut into circles to fit a muffin tin. Press the pastry into the muffin tin.
  3. In a saucepan, combine coconut milk, sugar, cornstarch, and vanilla extract. Whisk until smooth.
  4. Cook over medium heat, whisking constantly, until the mixture thickens.
  5. Pour the custard into the prepared pastry shells.
  6. Bake for 20-25 minutes, or until the pastry is golden and the custard is set.
  7. Let cool before serving.
