Main Ingredients
- 4 medium potatoes peeled and diced
- 1 cup peas
- 1 cup carrots diced
- 1 cup bell peppers diced
- 1 large onion finely chopped
- 2 tomatoes chopped
- 2 tablespoon vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro for garnish
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add tomatoes and cook until they soften.
Add turmeric powder, garam masala, and salt. Mix well.
Add diced potatoes, carrots, peas, and bell peppers. Stir to coat the vegetables with the spices.
Cover and cook until the vegetables are tender, stirring occasionally.
Garnish with fresh cilantro and serve hot.
