Main Ingredients
- 4 large potatoes, peeled and diced
- 0.5 cup breadcrumbs
- 0.25 cup all-purpose flour
- 0.25 cup chopped parsley
- Salt and pepper to taste
- Oil for frying
- Boil the potatoes until tender, then mash them. 
- Mix in breadcrumbs, flour, parsley, salt, and pepper. 
- Shape the mixture into croquettes. 
- Heat oil in a pan and fry the croquettes until golden brown. 
- Drain on paper towels and serve hot.
