  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cloves garlic minced

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wash and cut potatoes into bite-sized pieces.
  3. In a large bowl, mix olive oil, salt, pepper, rosemary, thyme, oregano, and garlic.
  4. Add potatoes to the bowl and toss to coat.
  5. Spread potatoes on a baking sheet in a single layer.
  6. Roast in the preheated oven for 40 minutes, stirring halfway through.
  7. Serve hot.
