Instructions
Preheat oven to 400°F (200°C).
Wash and cut potatoes into bite-sized pieces.
In a large bowl, mix olive oil, salt, pepper, rosemary, thyme, oregano, and garlic.
Add potatoes to the bowl and toss to coat.
Spread potatoes on a baking sheet in a single layer.
Roast in the preheated oven for 40 minutes, stirring halfway through.
Serve hot.
