Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 3 large Leeks white and light green parts only, sliced
  • 4 cups Potatoes peeled and diced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk full-fat
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the leeks and cook until soft, about 5-7 minutes.
  3. 3. Add the potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Stir in the coconut milk, salt, and pepper. Heat through and serve.
