Ingredients 

Main Ingredients

  • 4 cups Potatoes, diced
  • 1 cup Celery, chopped
  • ½ cup Red Onion, finely chopped
  • ½ cup Vegan Mayonnaise
  • 2 tablespoons Dijon Mustard
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoons Fresh Dill, chopped

Instructions 

  1. 1. Boil the diced potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, celery, and red onion.
  3. 3. In a small bowl, mix the vegan mayonnaise, Dijon mustard, salt, and black pepper.
  4. 4. Pour the dressing over the potato mixture and toss to coat evenly.
  5. 5. Garnish with fresh dill before serving.
