Ingredients 

Main Ingredients

  • 4 large russet potatoes
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 cup vegan cheese
  • ½ cup sliced green onions

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean and pierce them with a fork. Bake for 45 minutes or until tender.
  3. Let the potatoes cool slightly, then cut them in half lengthwise. Scoop out most of the flesh, leaving a bit to support the skin.
  4. Brush the potato skins with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and pepper.
  5. Place the skins on a baking sheet and bake for another 10 minutes until crispy.
  6. Remove from the oven, sprinkle with vegan cheese, and return to the oven until the cheese is melted.
  7. Top with sliced green onions and serve hot.
