Ingredients 

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onions and garlic until translucent.
  2. 2. Add the diced potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Stir in the coconut milk and season with salt and pepper to taste. Serve hot.
