Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 cup Chopped Vegetables (bell peppers, carrots, zucchini)
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the vegetable broth to a boil.
  3. 3. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  4. 4. In a mixing bowl, combine the chopped vegetables, olive oil, salt, and pepper.
  5. 5. Once the quinoa is cooked, fluff with a fork and add to the vegetable mixture.
  6. 6. Drizzle with lemon juice and mix well.
  7. 7. Serve warm or chilled.
