Ingredients 

Main Ingredients

  • 1 cup Carrots, chopped
  • 1 cup Potatoes, diced
  • 1 cup Onions, chopped
  • 2 cloves Garlic, minced
  • 1 cup Mushrooms, sliced
  • 2 cups Vegetable broth
  • 1 tablespoon Tomato paste
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • to taste Salt and pepper

Instructions 

  1. 1. Set your pressure cooker to sauté mode. Add a bit of oil and sauté the onions and garlic until fragrant.
  2. 2. Add the carrots, potatoes, and mushrooms. Sauté for another 5 minutes.
  3. 3. Stir in the tomato paste, thyme, rosemary, salt, and pepper.
  4. 4. Pour in the vegetable broth and give everything a good stir.
  5. 5. Close the lid and set the pressure cooker to high pressure for 20 minutes.
  6. 6. Once done, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  7. 7. Open the lid, give the stew a good stir, and adjust seasoning if needed.
