Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup edamame shelled
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. Rinse the quinoa under cold water using a strainer.
  2. In a saucepan, combine quinoa and water. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a mixing bowl, combine cooked quinoa, edamame, olive oil, salt, black pepper, and lemon juice.
  5. Mix well and serve warm or chilled.
