Ingredients 

Main Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • ¼ cup orange juice
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax eggs)
  • 1 cup vegan chocolate chips

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In another bowl, combine the pumpkin puree, vegetable oil, orange juice, and flax eggs.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chocolate chips.
  5. Pour the batter into the prepared loaf pan and spread it out evenly.
  6. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
