Ingredients 

Main Ingredients

  • 1 cup Pumpkin puree
  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • ½ cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ¼ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the pumpkin puree, melted coconut oil, brown sugar, and vanilla extract. Mix well.
  3. In another bowl, whisk together the flour, rolled oats, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
