Ingredients 

Main Ingredients

  • 12 oz Pasta any type
  • 1 cup Pumpkin puree
  • 1 cup Coconut milk full-fat
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Nutmeg ground

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. 3. Add pumpkin puree and coconut milk to the pan. Stir well to combine.
  4. 4. Season with salt, black pepper, and ground nutmeg. Let it simmer for 5-7 minutes.
  5. 5. Add the cooked pasta to the sauce. Toss to coat the pasta evenly.
  6. 6. Serve hot and enjoy your vegan pumpkin pasta!
