Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup coconut oil, melted
  • 2 tablespoon maple syrup

Filling

  • 1 can pumpkin puree (15 oz)
  • 1 cup coconut milk full-fat
  • ½ cup maple syrup
  • ¼ cup cornstarch
  • 1 teaspoon vanilla extract
  • 2 teaspoon pumpkin pie spice
  • ½ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Press mixture into the baking dish to form the crust.
  3. In another bowl, whisk together pumpkin puree, coconut milk, maple syrup, cornstarch, vanilla extract, pumpkin pie spice, and salt until smooth.
  4. Pour the filling over the crust and spread evenly.
  5. Bake for 45 minutes or until the filling is set. Let cool before slicing into bars.
