Ingredients 

Main Ingredients

  • 1 cup Pumpkin puree
  • ½ cup Coconut oil, melted
  • 1 cup Brown sugar
  • 2 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 teaspoon Pumpkin pie spice

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the pumpkin puree, melted coconut oil, brown sugar, and vanilla extract until smooth.
  3. In another bowl, combine the flour, baking soda, salt, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
