Ingredients

  • 3 cups rolled oats
  • 1 cup pumpkin puree
  • ½ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup chopped nuts (optional)
  • ½ cup dried cranberries (optional)

Instructions 

  1. Preheat oven to 325°F (165°C).
  2. In a large bowl, mix oats, pumpkin puree, maple syrup, coconut oil, vanilla extract, pumpkin pie spice, and salt until well combined.
  3. Spread mixture evenly on a baking sheet lined with parchment paper.
  4. Bake for 30 minutes, stirring halfway through.
  5. Let cool completely, then mix in nuts and dried cranberries if using.
