Instructions
Preheat oven to 325°F (165°C).
In a large bowl, mix oats, pumpkin puree, maple syrup, coconut oil, vanilla extract, pumpkin pie spice, and salt until well combined.
Spread mixture evenly on a baking sheet lined with parchment paper.
Bake for 30 minutes, stirring halfway through.
Let cool completely, then mix in nuts and dried cranberries if using.
