- 1 cup Pumpkin puree
- 1 cup Almond milk or any plant-based milk
- 1 tablespoon Apple cider vinegar
- 2 tablespoon Maple syrup
- 1 teaspoon Vanilla extract
- 1.5 cup All-purpose flour
- 2 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon Ground cinnamon
- 0.5 teaspoon Ground nutmeg
- 0.5 teaspoon Ground ginger
- 0.25 teaspoon Ground cloves
- 0.25 teaspoon Salt
In a mixing bowl, whisk together pumpkin puree, almond milk, apple cider vinegar, maple syrup, and vanilla extract.
In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Heat a non-stick pan over medium heat. Pour ¼ cup of batter onto the pan for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with your favorite toppings.
