Ingredients 

Main Ingredients

  • 8 pieces Tortillas Whole wheat or gluten-free
  • 1 cup Vegan cheese Shredded
  • 1 cup Black beans Cooked and drained
  • 1 cup Corn kernels Fresh or frozen
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Heat a skillet over medium heat and add a bit of olive oil.
  2. 2. Place one tortilla in the skillet and sprinkle with vegan cheese, black beans, and corn.
  3. 3. Top with another tortilla and cook until golden brown, then flip and cook the other side.
  4. 4. Repeat with remaining tortillas and filling.
  5. 5. Cut into wedges and serve warm.
