Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 2 cups spinach fresh, chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. 2. Add the carrots, celery, and zucchini. Cook for about 5 minutes, stirring occasionally.
  3. 3. Stir in the quinoa, diced tomatoes, vegetable broth, thyme, basil, salt, and pepper. Bring to a boil.
  4. 4. Reduce the heat and let it simmer for about 20 minutes, or until the quinoa and vegetables are tender.
  5. 5. Add the chopped spinach and cook for another 5 minutes. Adjust seasoning if needed.
  6. 6. Serve hot and enjoy!
