Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine cooked quinoa, avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  5. 5. In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or chill in the fridge for later.
