Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable broth
  • 1 can Black beans rinsed and drained
  • 1 can Diced tomatoes
  • 1 cup Corn kernels fresh or frozen
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  3. 3. Add quinoa, vegetable broth, black beans, diced tomatoes, and corn. Stir to combine.
  4. 4. Add chili powder, cumin, paprika, salt, and black pepper. Stir well.
  5. 5. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until quinoa is cooked and chili is thickened.
  6. 6. Serve hot, garnished with your favorite toppings.
