Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 8 pieces taco shells

Toppings

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup sliced avocado
  • 1 cup salsa

Instructions 

  1. 1. Cook quinoa according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add black beans, cumin, chili powder, garlic powder, and salt. Cook for 5-7 minutes.
  3. 3. Warm taco shells according to package instructions.
  4. 4. Assemble tacos by adding quinoa and black bean mixture to each shell. Top with lettuce, tomatoes, avocado, and salsa.
