Instructions
Rinse quinoa under cold water.
In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
In a mixing bowl, massage kale with olive oil, garlic, lemon juice, salt, and pepper.
Fluff quinoa with a fork and mix with kale.
