Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 bunch kale, chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. In a mixing bowl, massage kale with olive oil, garlic, lemon juice, salt, and pepper.
  4. Fluff quinoa with a fork and mix with kale.
