Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cup water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour dressing over the salad and toss to combine.
  7. 7. Serve immediately or chill in the fridge for later.
