Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove quinoa from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour the dressing over the quinoa and vegetables. Toss to combine.
  7. 7. Garnish with fresh parsley before serving.
