Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots chopped
  • 2 Celery Stalks chopped
  • 1 Zucchini chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 2 cups Spinach fresh

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. 3. Add carrots, celery, and zucchini. Cook for about 5 minutes.
  4. 4. Stir in diced tomatoes, vegetable broth, quinoa, thyme, oregano, salt, and pepper.
  5. 5. Bring to a boil, then reduce heat and simmer for 20 minutes, or until quinoa is cooked.
  6. 6. Stir in fresh spinach and cook until wilted, about 2 minutes.
  7. 7. Serve hot and enjoy!
