Quinoa Vegetable Stuffed Peppers Recipe

- 4 bell peppers tops cut off and seeds removed
- 1 cup quinoa rinsed
- 2 cups vegetable broth
- 1 onion chopped
- 2 cloves garlic minced
- 1 cup diced tomatoes
- 1 cup corn kernels
- 1 cup black beans rinsed and drained
- 1 teaspoon cumin
- 1 teaspoon paprika
- to taste salt and pepper
- 2 tablespoon olive oil
Preheat your oven to 375°F (190°C).
Cook the quinoa in vegetable broth according to package instructions.
In a large mixing bowl, combine the cooked quinoa, onion, garlic, diced tomatoes, corn, black beans, cumin, paprika, salt, and pepper.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Drizzle the stuffed peppers with olive oil.
Bake in the preheated oven for 30 minutes, or until the peppers are tender.
