Ingredients 

Main Ingredients

  • 4 units Zucchini medium-sized
  • 1 cup Quinoa cooked
  • 1 cup Cherry tomatoes halved
  • 1 cup Corn kernels cooked
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a mixing bowl, combine cooked quinoa, cherry tomatoes, corn kernels, olive oil, salt, and black pepper.
  4. Stuff the zucchini boats with the quinoa mixture.
  5. Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes, until zucchinis are tender.
