Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 1 Yellow bell pepper, chopped
  • 1 Zucchini, chopped
  • 1 can Black beans, drained and rinsed
  • 1 can Kidney beans, drained and rinsed
  • 1 can Diced tomatoes
  • 2 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 cup Vegetable broth
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add bell peppers and zucchini, cook for 5 minutes.
  4. Stir in black beans, kidney beans, diced tomatoes, chili powder, cumin, and paprika.
  5. Add vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste. Serve hot.
